Pear and Manchego Salad with Walnut Dressing

Ingredients
10 cups baby lettuce
2 red Bartlett pears or other red-skinned pears, sliced (8 oz.)
¼ cup halved walnuts, toasted and coarsely chopped
1 oz thinly sliced Manchego cheese
3 tablespoons walnut oil
1 tablespoon sherry vinegar
1 tablespoon water
1 teaspoon dijon mustard
1 teaspoon honey
¼ teaspoon salt
⅛ a teaspoon of ground black pepper
2 tablespoons pomegranate seeds
To make
Bartlett pears, toasted walnuts and grated Manchego cheese are sprinkled with lettuce leaves to make a light and satisfying pear and manchego salad with a nutty dressing. Pomegranate seeds add flavor and healing properties.
Arrange the lettuce leaves, pear slices, walnuts, and cheese on 4 plates.In a small bowl, whisk together the oil, vinegar, water, mustard, honey, salt and pepper. Pour 1 1/2 tablespoons of the dressing over each salad, then sprinkle 1/2 tablespoon of the pomegranate seeds on top. Serve immediately.
