Pear-Vanilla Freezer Jam

Ingredients
4 cups coarsely chopped peeled Bartlett pears (about 5 large)
1 teaspoon grated lemon zest
¼ cup plus 2 tablespoons fresh lemon juice
1 vanilla pod, cut lengthwise
1 pack of pectin crystals (1.75 oz)
4 cups sugar

Enjoy the taste of ripe seasonal pears all year long with this simple jam. Spread on toast or English muffins, or try gingerbread cookies, bran muffins, and hot rolls. Jam also makes a delicious glaze for pork tenderloin.
Place the pears in a food processor; chop to fine crumbs. Put the pear, peel, juice, and vanilla pods in a large saucepan. Add the pectin. Put the skillet on high heat; bring to a boil. Add the sugar; cook for 5 minutes or until the sugar is dissolved. Bring to a boil; cook for 1 minute, stirring constantly.Remove from heat. Remove the foam from the surface; discard. Remove the vanilla pod. Peel the pear mixture from the seeds; discard the beans. Stir for 5 minutes to make sure the fruit is in the jam. Cover and refrigerate overnight.Note: Store pear-vanilla jam for freezing in airtight containers for up to three weeks or freeze for up to six months.
