Ingredients
1 teaspoon ground cumin
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
6 chicken thighs (about 1/2 pound), peeled
1 cup chopped onion
1 can mexican stewed tomatoes (14.5 oz) with jalapeno peppers and spices, skinless
1 can sliced green chili peppers, skinless (4.5 oz)
1 can pinto beans (15 oz), rinsed and dried
1 can of beans (15 oz.), washed and dried
¼ cup chopped fresh cilantro
¼ cup low-fat sour cream

Chicken thighs stay moist and tender in this simple slow cooker recipe. Smoky cumin and stewed tomatoes in Mexican style give this hearty stew a special piquancy.
Combine cumin, salt and pepper; sprinkle over chicken.Put the chicken in an electric slow cooker; add the onion, tomatoes, and chili. Cover and cook over high heat for 3 hours. Add the beans. Cover; cook over high heat for 1 hour.Place 1 chicken thigh in each of the 6 soup bowls; pour 1 1/4 cups stew into each bowl. Sprinkle each serving with 2 teaspoons of cilantro and 2 teaspoons of sour cream.
