These mini pecan pies are perfect for holiday gatherings. They are guaranteed to appeal to the public and are surprisingly easy to prepare!
Beat 1 cup butter and cream cheese with an electric mixer on medium speed until creamy. Gradually add the flour to the butter mixture, whisking on low speed. Shape the mixture into 48 balls and place on a baking sheet; cover and refrigerate for 1 hour.Place 1 ball of batter in each lightly oiled muffin tin in mini muffin tins, shaping each one into a shell shape.Whisk together the brown sugar and the following 5 ingredients. Spoon over the pie cakes.Bake at 350 ° C for 20 minutes or until the filling is set. Cool in the tins on a wire rack for 10 minutes. Remove from the pan; cool on a wire rack for 20 minutes or until completely cooled.
