Penne With Spinach and Feta

Ingredients
12 ounces raw whole-grain penne (or other small-shaped pasta)
1 tablespoon olive oil
1 medium onion, diced (about 1 cup)
2 garlic cloves, minced
1 ½ cups pears or cherry tomatoes (about 1/2 pound) or 1/2 can diced tomatoes (14.5 oz), drained
¾ cup low-sodium, fat-free chicken stock
1 pack (6 oz) fresh spinach or arugula leaves
¼ teaspoon salt
¼ teaspoon pepper
½ cup chopped feta cheese

This delicious pasta dish is prepared quickly and is healthy with the use of whole-grain penne, spinach, and fresh cherry tomatoes. Don't forget to garnish with shredded feta cheese for a dinner you won't forget.
Prepare the pasta according to the instructions on the package, without adding salt or fat.Meanwhile, heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion and cook, stirring, for 4 minutes. Add the garlic and cook, stirring, for 30 seconds. Add tomatoes and stock; bring to a boil and cook for 5 minutes or until tomatoes are tender and some liquid has evaporated. Lightly crush the tomatoes with a wooden spoon. Slowly add the spinach or arugula; cook, stirring, for 2 minutes or until the leaves are wilted.Drain the pasta. In a serving bowl, combine the pasta with the warm tomato-spinach sauce. Season with salt and pepper. Garnish with cheese.
