Penne with Spinach and Sausage

Ingredients

1 pound penne
1 pound sweet or spicy Italian sausage, uncoated
1 clove garlic, minced
2 14.5-ounce cans diced tomatoes with juice
1 teaspoon dried basil
1 teaspoon dried oregano
5 oz baby spinach
1 cup grated mozzarella
½ cup grated parmesan cheese, plus more to serve

Bring a large pot of salted water to a boil. Cook the penne until al dente, about 11 minutes. Drain the water.In a large skillet over medium-high heat, saute the sausages until they are no longer pink, stirring to break into chunks, about 6 minutes. Add the garlic and cook for 30 seconds, stirring occasionally. Add tomatoes with juice, basil and oregano. Bring the mixture to a boil, then reduce the heat to medium and simmer until slightly thickened, about 5 minutes, stirring twice.Add the pasta to the pan, stirring to combine. Add the spinach. Cook until they wilt, stirring once or twice. Taste and season with salt and pepper. Remove the pan from the heat and sprinkle the macaroni and cheese on top. Stir once and serve with a sprinkle of parmesan cheese on top.
