Perfect Mashed Potatoes

3 pounds golden yukon potatoes
2 teaspoons salt, divided
⅓ cup of butter
⅓ a serving of mashed potatoes in half
4 ounces softened cream cheese

Golden Yukon-style potatoes have a texture that is just right for making a flavorful turkey sauce or melted butter.
Peel, boil and strain.Peel the potatoes and cut them into 1-inch-thick slices. In a medium-sized roasting pan over medium-high heat, bring the potatoes, 1 tsp salt, and cold water to a boil, covered. Reduce the heat to medium-low and cook for 16-20 minutes or until the potatoes are tender; drain.Add creamy richness.Return the potatoes to the roasting pan. Cook until the water has evaporated and the potatoes are dry. Arrange the potatoes in a pile on 1 side; add the butter, the next 3 ingredients, and the remaining 1 tsp salt to the opposite side of the roasting pan. Cook for 1-2 minutes or until the butter is melted and the mixture boils.Whisk until smooth.Remove from heat; beat on medium speed with a hand-held electric mixer for 30 seconds to 1 minute or until smooth. (Don't overdo it.) Serve immediately.
