Perfectly Seared Scallops

8 (1 oz) scallops
¾ teaspoon kosher salt
½ teaspoon black pepper
1 tablespoon grape seed oil (or other vegetable oil for frying over high heat)

Cooking scallops at home may be a bit difficult, but trust us, once you've made the perfect roast, you'll be eager to cook them whenever possible. Follow this reliable method of preparing perfectly seared scallops to master the cooking technique.
Remove a small muscle flap from the side of each scallop by gently peeling it. Dry the scallops with paper towels. Sprinkle 1 side of scallops with half the salt and pepper.Heat the oil in a skillet over medium-high heat. When the oil and pan are very hot, place the scallops with the seasoned side down clockwise in the pan, making sure that the scallops do not touch. Cook, without stirring, until the edges of the scallops are browned and browned about 1/4 inch (they become more opaque), about 1 1/2 minutes. Sprinkle with the remaining half of the salt and pepper.Turn each scallop over in the order they were placed in the pan, and cook for another 1 to 1 1/2 minutes. Remove from the pan and let stand for 1-2 minutes before serving.
