1 can pineapple slices (20 oz), squeezed
1 can canned pineapple slices (20 oz.) in juice, drained
⅓ granulated sugar
⅓ cup packed light brown sugar
6 tablespoons (approximately 1 1/2 ounces) all-purpose flour
2 tablespoons fresh lime juice (from 1 lime)
8 oz grated sharp cheddar cheese (about 2 cups)
40 round buttery crackers (such as the Ritz) (from 2 cracker tins), crushed (about 2 cups)
½ cup (4 oz) melted butter

We've modified this traditional casserole to balance the sweetness, allowing the pineapple and cheese to truly shine. The rich taste makes it the perfect side dish for baked ham.
Preheat the oven to 350°F. Lightly coat an 8-inch square baking dish with cooking spray. Combine the pineapple slices, pineapple chunks, granulated sugar, brown sugar, flour, and lime juice in a large bowl; add the cheese. Spoon the mixture into the prepared baking dish.Combine the crushed crackers and melted butter in a medium bowl; transfer the pineapple mixture to a baking dish. Bake in the preheated oven until the top is golden brown and the mixture begins to bubble, 30 to 35 minutes. After 25 minutes, cover with aluminum foil to avoid browning. Let stand for 10 minutes; serve.
