Ingredients

2 ½ cups chopped cooked chicken breast (about 1 pound)
½ cup carrots, sliced into matchsticks

4 (6-inch) whole-grain pitas, cut in half each
8 romaine lettuce leaves

To make

Almonds add a crunchy flavor to the filling, although you can substitute toasted walnuts or pecans if you prefer. Serve this pineapple chicken salad recipe with pita bread and a side dish of baked potato chips to complete the dish.
Combine the first 11 ingredients in a large bowl, mixing well. Place 1 lettuce leaf on each half of the pita bread; pour 1/3 cup of the chicken mixture over each half.
