Poached Cod with Shiitakes

Ingredients
1 tablespoon dark sesame oil
1 tablespoon minced peeled fresh ginger
8 oz chopped shiitake mushroom caps
3 garlic cloves, chopped
½ cup unsalted chicken stock (such as Swanson)
¼ cup sake (rice wine)
2 ½ tablespoons low-sodium soy sauce
2 ½ teaspoons white miso (soy paste)
1 tablespoon sherry vinegar
½ teaspoon sugar
4 cod fillets (6 oz.)
4 (1 inch) chopped green onions
3 tablespoons cilantro
¼ teaspoon ground black pepper
To make
Cooked in less than 20 minutes, poached cod with shiitake becomes a real weekday dinner. Cod is cooked in a thick broth that is served directly from the pan to the plate for a delicious and quick dinner.
Preheat a large skillet over medium-high heat. Add the butter; stir to combine. Add the ginger, mushrooms and garlic; simmer for 5 minutes, stirring frequently. Add the broth and the following 5 ingredients (with added sugar); heat to 155°C. Reduce the heat to medium-low; place the fish on top of the mushroom mixture. Cover and simmer for 10 minutes or until the desired degree of roasting is achieved, maintaining a constant temperature of 150°.Carefully remove the fish from the pan; keep warm. Increase heat to medium-high; add onion. Cook uncovered for 1 minute or until the sauce is slightly thickened. Pour 2/3 cup stock mixture into each of 4 shallow bowls; place 1 fillet on each serving. Sprinkle evenly with coriander and pepper.
