Pork-and-Pineapple Kebabs

Ingredients
½ pound pork tenderloin
1 ½ tablespoons brown sugar
1 ½ tablespoons low-sodium soy sauce
1 tablespoon orange juice
1 tablespoon grated fresh onion
2 teaspoons lemon juice
⅛ a teaspoon of salt
Pinch of pepper
1 bay leaf
8 (1-inch) cubes of fresh pineapple
8 (1 inch) red bell pepper slices
Spray for cooking vegetables
To make
Place the marinated pork tenderloin cubes on skewers with diced fresh pineapple and red bell pepper, then grill them to make a healthy barbecue dish that's perfect for warm spring and summer evenings. Serve with fresh vegetables and white rice for a full meal.
Trim the fat from the pork and cut the pork into 8 (1-inch) cubes. Combine the brown sugar and the following 7 ingredients (brown sugar and bay leaf) in a large, zippered plastic bag; add the pork cubes. Close the bag and marinate in the refrigerator for 1 hour, turning the bag over periodically. (To prevent the pork from becoming mushy, marinate it for no more than 1 hour.)Remove the pork from the bag, reserving the marinade. Discard the bay leaf. Line 4 pork cubes, 4 pineapple cubes, and 4 bell pepper slices alternately on each of 2 (10-inch) skewers.Prepare the grill. Place the skewers on a grill rack greased with cooking spray and cook for 14 minutes or until tender, turning frequently and drizzling with the marinade left to cook.Note: Canned pineapples can be replaced with fresh ones. Drain 1 8-ounce can of unsweetened pineapples, leaving 16 slices.
