Pork Chops with Tomato Gravy and Squash

Ingredients
4 (6 oz) pork loin chops with bones in the center
1 teaspoon kosher salt, divided
¾ teaspoon freshly ground black pepper, divided
1 tablespoon olive oil
1 cup low-sodium tomato juice, divided
2 teaspoons cornstarch
⅓ cup unsalted chicken broth
¾ teaspoon garlic powder
2 chopped green onions
2 tablespoons chopped fresh flat-leaved parsley, divided
2 tablespoons unsalted butter, divided
1 pound yellow courgettes, sliced 1/4-inch thick
To make
The sauce is so easy to make that it can be made with other proteins. Try them with poached eggs or chicken.
Sprinkle the pork with 1/4 teaspoon salt and 1/4 teaspoon pepper. Heat the oil in a skillet over medium-high heat. Add the pork; cook for 5 minutes on each side. Remove from the mold.Combine 1/2 cup tomato juice and cornstarch in a small bowl, stirring with a whisk. Add the cornstarch mixture, remaining 1/2 cup tomato juice, stock, garlic powder, and onion to the pan. Bring to a boil; reduce heat and simmer 3 minutes. Remove the pan from the heat. Add 1/4 teaspoon salt, 1/4 teaspoon pepper, 1 tablespoon parsley and 1 tablespoon butter.Heat the remaining 1 tablespoon of butter in a skillet over high heat until frothy. Add the courgettes; cook for 5 minutes, stirring occasionally. Add the remaining 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1 tablespoon parsley. Serve the pork with the sauce and zucchini.
