Pork Satay with Peanut Dipping Sauce

Ingredients
1 (1 lb) trimmed pork tenderloin
¼ cup low-sodium soy sauce
2 tablespoons light brown sugar
1 tablespoon low-fat peanut butter
1 tablespoon fresh lime juice
2 garlic cloves, minced
¼ cup chopped green onion
18 (6-inch) wooden skewers

We love the dip sauce served with these tender strips of pork, but if you're in a hurry, substitute your favorite bottled peanut sauce instead of making it yourself.
Cut the pork tenderloin lengthwise in half. Cover the tenderloin halves with plastic wrap; beat to 1/4-inch thickness using a meat grinder or small heavy skillet. Cut each half of the tenderloin diagonally across the fibers in 1-inch-thick strips. Put the strips in a large zippered plastic bag.Combine soy sauce and the following 5 ingredients in a small bowl; whisk together until smooth. Put the strips of tenderloin in the bag, mix to cover, and close the bag. Marinate in the refrigerator for at least 1 hour, turning the bag over occasionally.While the tenderloin is marinating, soak the skewers in water for 30 minutes.Preheat the broiler.Remove the tenderloin strips from the bag; drain the marinade. Thread 1 strip on each skewer. Place the skewers on a broiler rack greased with cooking spray; bake for 3 minutes on each side or until tender.
