Prosciutto-Wrapped Mango Bites

Ingredients
1 ripe mango, peeled
1 ½ cups loosely packed arugula
1 pack fresh basil (1 oz)
4 very thin slices of prosciutto or country ham
¼ teaspoon ground black pepper

At the delicatessen counter, ask for paper - thick slices of meat. To simplify cooking, look for a package of sliced mango in the "Products" section. We do not recommend cutting mango slices in a jar — they are too soft.
Cut the mango into 1/4-to 1/2-inch (approximately 16-inch) thick slices. Place 1 mango slice on top of 3 arugula leaves and 1-2 basil leaves.Cut each prosciutto slice lengthwise into 4 strips. Wrap the center of each mango bundle in 1 strip of prosciutto. Place on a serving platter and sprinkle with pepper.Note: To prepare in advance, prepare the recipe according to the instructions. Cover the pieces with wet paper towels and refrigerate for 30 minutes.Prosciutto-wrapped melon slices: Replace the mango with half of 1 small melon or honeydew. Follow the recipe as directed.Pear slices wrapped in prosciutto: Replace the mango with 1 ripe pear, unpeeled. Slice the pear as indicated in the step, mix the pear slices and 1/2 cup of lemon-lime soft drink to avoid browning; strain. Follow the recipe as directed.Prosciutto-wrapped apple slices: Replace the mango with 1 unpeeled Gala apple. Slice the apple as indicated in the step, mix the apple slices and 1/2 cup of lemon-lime soft drink to avoid browning; strain.
