Prosciutto-Wrapped Stuffed Dates

¾ cup (6 oz) goat's cheese
1 tablespoon minced shallots
1 tablespoon chopped fresh thyme
¼ teaspoon freshly ground black pepper
24 whole pitted dates
6 thin slices of prosciutto

Preheat the oven to 350 degrees.Combine the first 4 ingredients in a small bowl, stirring with a fork. Cut the dates lengthwise, cutting on the other side, but not through. Open the dates; place 1 round teaspoon of the cheese mixture on each date. Cut 1 slice of prosciutto lengthwise in half and then across to make 4 equal slices. Repeat with the remaining prosciutto to form 24 pieces. Wrap each date in 1 piece of prosciutto; place the dates on a baking sheet lined with parchment paper. Bake at 350 ° C for 8 minutes or until the filling is completely warmed through. Serve immediately.
