Pulled-Pork Sandwiches

Ingredients
One 3-pound boneless pork roast
Salt
⅔ cup apple cider vinegar
1 ½ cups barbecue sauce, plus more to serve
6 hamburger buns
2 cups ready-made kale salad

The slow cooker turns out tender meat, which is just right for these sandwiches with stewed pork. Since pork is cooked for 8 to 10 hours, this is a good recipe to use during the work week.
Cut off any excess fat from the roast pork. Sprinkle with salt. Place in a slow cooker and pour vinegar over the roast. Cover and cook over a low heat until the roast is soft and easy to fall apart, 8 to 10 hours.Remove the roast from the oven and cut the meat into small pieces. Discard the cooking liquid. Return the pork to the slow cooker and drizzle over the barbecue sauce. Continue cooking until they are warmed through, about 30 minutes.Place the kale salad on the bottom half of the hamburger buns. Lay out a layer of pork, then top with the other half of the bun. Serve immediately, drizzled with barbecue sauce.
