Pulled Pork Tostadas with Slaw and Chipotle Cream

Ingredients
1 pound braised pork, * warm or at room temperature
3 or 4 limes
2 tablespoons canola oil or other oil with a neutral taste
8 cups shredded kale or 1 10-ounce bag of kale salad mix
¾ cup fresh coriander, coarsely chopped
¼ red onion, thinly sliced
salt
1 cup sour cream
½ chipotle chili from a can of chipotle chili in adobo sauce, unseeded and finely chopped
6 8-inch-thick tostadas (flat corn tortillas with a crisp crust)
2 tomatoes, diced
3 radishes, sliced

Get ready for a serious taste. These braised pork tostads combine spicy braised pork, grated chili, with crispy cabbage, Chipotle cream and corn tortillas to create a deliciously simple dish that is sure to appeal to you.
Cut in half and squeeze 1-2 limes to make 2 tablespoons of juice. In a large bowl, combine the lime juice and butter. Add the cabbage, onion and cilantro, stirring occasionally. Add salt to taste. Slice the remaining 2 limes into 6 wedges each. Set the kale and lime wedges aside.In a small bowl, combine the sour cream and Chipotle pepper. Season with salt and set aside.Arrange the tostadas on plates. Top with pork, cabbage, a mixture of sour cream and tomatoes. Arrange the lime and radish wedges side by side and serve.
