Ingredients

6 ½ cups water, divided
4 oz raw egg noodles
1 pound sirloin steak, trimmed
Cooking Spray
1 cup chopped onion
½ teaspoon freshly ground black pepper
½ teaspoon kosher salt
¼ teaspoon hot paprika
1 pack (6 oz) exotic mushroom mixes with sliced vegetables
1 cup low-sodium beef broth, divided
5 teaspoons all-purpose flour
⅓ cup low-fat sour cream
3 tablespoons thinly sliced green onions
1 tablespoon butter
2 tablespoons chopped fresh flat-leaved parsley

Prepare a classic family dish in a short time. Best of all, a serving of this mouth-watering dish contains less than 400 calories.
In a large saucepan, bring 6 cups of water to a boil. Add noodles; cook for 5 minutes or until al dente. Drain the water.Cut the beef across the fibers in 1/4-inch-wide strips; cut the strips into 2-inch-thick slices.Preheat a large skillet over medium-high heat. Brush the mold with cooking spray. Add the beef to the skillet; simmer for 4 minutes or until lightly browned. Remove the beef from the pan. Add 1 cup onion, black pepper, salt, paprika and mushrooms to the pan; simmer for 4 minutes or until tender. Reduce heat to medium.Combine 1/4 cup beef stock and flour in a small bowl, stirring with a whisk. Add the stock mixture, beef, remaining 3/4 cup broth, and remaining 1/2 cup water to the pan, and scrape off the pan until the pieces are browned. Cover and cook for 8 minutes or until the sauce thickens. Remove from heat; add sour cream, green onions and butter. Serve beef mixture with egg noodles; sprinkle with parsley.
