Radish Salad with Goat Cheese

Ingredients
4 teaspoons white wine vinegar
1 tablespoon extra virgin olive oil
1 teaspoon honey
¼ teaspoon salt
2 cups radishes, cut lengthwise into 1/4-inch-thick slices, with the root and stem remaining 1/2-inch thick.
1 tablespoon chopped fresh oregano
4 cups spinach
2 ounces shredded goat's cheese (about 1/2 cup)
½ teaspoon freshly ground black pepper
To make
To crumble goat's cheese, freeze it for 10 minutes and then mash it with a fork.
Combine the first 4 ingredients in a bowl, mixing well. Add radishes and oregano; stir to coat. Arrange 1 cup of spinach on each of 4 plates. Using a slotted spoon, place 1/2 cup radishes on each plate. Sprinkle each serving with 2 tablespoons of cheese and 1/8 teaspoon of pepper. Pour the remaining dressing evenly over the salad.
