Red-Pepper Hummus in Cucumber Cups

Ingredients
2 cups canned chickpeas, peeled and rinsed
17 oz. peel and slice the roasted red pepper flakes
1 garlic clove, chopped
⅓ cup of tahini
¼ cup lemon juice (from 1 large lemon)
3 tablespoons olive oil
¼ teaspoon ground cumin
Salt and pepper
2 english cucumbers
To make
Combine the chickpeas, red pepper, garlic, tahini, lemon juice, olive oil, cumin, salt, pepper, and 1 tablespoon of hot water in a food processor and puree until smooth. Taste and add seasonings as desired.Cut the cucumbers into 1/2-inch thick slices and remove the seeds with a small spoon or melon ball, leaving the bottom untouched to form a cup. Fill each cup with hummus and serve.
