Roast Cod with Garlic Butter

Ingredients
¼ cup softened unsalted butter
1 ½ tablespoons chopped flat-leaved parsley
1 large garlic clove, peeled and minced
2 teaspoons minced shallots
½ teaspoon Dijon mustard
1 ½ tablespoons minced parma ham
1 tablespoon almond, rice or all-purpose flour
2 tablespoons freshly squeezed lemon juice
Salt to taste
Freshly ground pepper to taste
2 tablespoons canola oil
4 skinless cod fillets (7 oz each)

To make this simple cod recipe, simply fry the fish in a heatproof skillet, then brush with savory garlic butter seasoned with mustard, shallots, parsley, and prosciutto.
Combine the first 10 ingredients in a small bowl. Set aside.Heat the oil in a wide, deep, heatproof skillet over medium-high heat. Season the cod fillet with salt and pepper and cook for 4 minutes.
