3 bacon slices, chopped
¼ teaspoon dried thyme
1 ½ cups chopped onion
a cup of low-sodium, fat-free chicken broth
1 pound brussels sprouts, halved

To make

Brussels sprouts combine with bacon to create a delicious instant side dish.
Preheat a large skillet over medium-high heat. Add the bacon; cook for 7 minutes or until crisp. Remove the bacon from the pan with a slotted spoon; drain.Add thyme and onion to skillet; simmer 3 minutes. Add broth and Brussels sprouts; bring to a boil. Cover and simmer for 6 minutes or until crisp. Sprinkle with bacon.Lemon and pecan option: don't use bacon; use 1 teaspoon of olive oil instead of the bacon filling. Replace the chopped onion with 1 cup of chopped onion. Finally, add 1/4 cup chopped pecans, 2 teaspoons grated lemon zest, 1 tablespoon fresh lemon juice, and 1/4 teaspoon black pepper. Yield: 4 servings.
