Sautéed Tomato and Onion Kale

Ingredients
1 ½ tablespoons olive oil
1 cup vertically sliced red onion
1 cup cherry tomatoes, halved
1 large bunch lacinato cabbage, peeled and chopped (about 4 cups)
½ teaspoon ground black pepper

Traditional cabbage can take an hour or more to prepare; hearty lachinato cabbage takes just 3 minutes to prepare. Do not forget to remove the middle of the cabbage greens to avoid bitterness and thick stalks that need to be chewed. To make the punch, add a little hot sauce or red wine vinegar. Serve with our black pea cakes with corn salsa - the perfect southern vegetarian dish. As a quick and healthy option, prepare this side dish for a fast lunch on Monday.
