Scrambled Egg and Cheese Bagel

Ingredients
2 slices of spicy low-fat cheddar cheese (0.75 oz)
1 (4 oz) bagel, sliced and toasted
1 large egg
Pinch of salt
Pinch of freshly ground black pepper
1 teaspoon butter
To make
Place 1 slice of cheese on a slice of each half of the bagel. Combine the egg, salt and pepper in a bowl, stirring with a whisk. Melt the butter in a small nonstick skillet over medium-high heat. Add the egg mixture; cook, without stirring, until the mixture is set on the bottom. Run a spatula along the bottom of the mold to form a curd mass. Continue cooking, stirring occasionally, until the egg mixture thickens but remains moist. Immediately place half an egg on top of the cheese on each half of the bagel.
