Ingredients

½ pound raw fresh shrimp
2 large eggs, lightly beaten
½ pound ground pork
1 can water chestnuts (8 oz), peeled and crushed
1 can bamboo shoots (8 oz.), dried and crushed
3 garlic cloves, minced
2 green onions, diced
2 tablespoons chopped fresh ginger
1 tablespoon soy sauce
⅛ a teaspoon of salt
⅛ a teaspoon of pepper
1 pack of 12oz spring roll wrappers
Vegetable oil
Sweet chili sauce
Lettuce leaves (optional)

These Asian-inspired spring rolls make great appetizers and are sure to impress guests at your next party. Serve with homemade chili sauce on top of fresh lettuce leaves.
Peel and slice the shrimp, if desired; finely chop.Combine shrimp, 1 egg, pork, and the following 8 ingredients. Place 1 tablespoon of the mixture in the center of each spring roll wrapper. Wrap the top corner of each wrapper over the filling, tucking the tip of the corner under the filling, and fold the left and right corners over the filling. Lightly brush the remaining corner with the remaining egg; roll the stuffed end tightly to the remaining corner and press gently to seal.In a medium saucepan, pour the vegetable oil 2 inches deep and heat to 350 degrees. Saute the spring rolls, several pieces at a time, for 6 minutes or until golden brown. Dry on paper towels. Serve the spring rolls with sweet chili sauce and, if desired, on top of lettuce leaves.
