Shaved Broccoli-Apple Salad with Tarragon Dressing and Bacon

Ingredients
3 tablespoons apple cider vinegar
1 teaspoon whole grain dijon mustard
½ teaspoon freshly ground black pepper
¼ teaspoon kosher salt
1 shallot, thinly sliced

This healthy broccoli salad is a refreshing new version of the standard picnic dish with broccoli and bacon, which is sometimes drizzled with mayonnaise dressing. Here, instead of mayonnaise, you can use Greek yogurt and whole-grain Dijon mustard.
Combine the first 5 ingredients in a bowl and let stand for 10 minutes. Add yogurt, mayonnaise, and tarragon; whisk to combine.With the food processor turned on, add the broccoli through the food tray of the food processor equipped with the slicing attachment. Transfer the broccoli to a bowl. Add the juice to the bowl of a food processor. Repeat with the apples; add the apples to the broccoli bowl.Combine the dressing and broccoli mixture; mix well to coat. Cover and refrigerate for 3 hours. Sprinkle with bacon before serving.
