Shaved Summer Squash Salad with Prosciutto Crisps

Ingredients
1 medium-sized zucchini
2 medium yellow zucchini
¼ teaspoon salt
2 tablespoons thinly sliced fresh mint
1 tablespoon extra virgin olive oil
½ teaspoon grated lemon zest
1 teaspoon fresh lemon juice
¼ teaspoon freshly ground black pepper
3 thin slices prosciutto (1 oz), chopped
¼ cup (1 oz) shredded ricotta or feta salads

Summer zucchini tastes good raw if you shave it and marinate it with a little salt. Add salted prosciutto and you'll have the perfect side dish.
Using a vegetable peeler, cut the zucchini and zucchini into thin strips. Remove the seeds. Place the zucchini and squash in a medium bowl and season with salt.Combine the mint and the following 4 ingredients (with pepper) in a small bowl; whisk to combine. Pour over the zucchini and squash; toss to combine.Preheat a small nonstick skillet over medium-high heat. Add the prosciutto; saute for 2 minutes or until crisp.Arrange 3/4 cup of lettuce on each of the 4 plates. Sprinkle each serving with 1 tablespoon of cheese; sprinkle evenly with prosciutto.
