Shrimp-and-New Potato Chowder

Ingredients
2 tablespoons butter
3 bunches chopped green onions
1 ½ pounds new potatoes, diced
2 cups reduced-sodium chicken broth
1 ½ cups heavy cream
½ cup dry white wine
1 teaspoon kosher salt
¼ teaspoon ground black pepper
½ pound medium-sized raw shrimp, peeled and pitted
2 teaspoons hot sauce

Add the prawns a few minutes before serving so they don't overcook.
Melt the butter in a medium-sized roasting pan over medium-high heat. Add the green onions and cook, stirring frequently, for 1 minute.Add the potatoes and the next 5 ingredients and turn up the heat to high. Bring to a boil. Reduce the heat to medium-low and cook, stirring occasionally, for 25 minutes or until the potatoes are tender.Add the shrimp and hot sauce and cook for 3 minutes.CUT the onion and potato into equal-sized pieces. This will ensure even cooking.
