Shrimp Bruschetta

Ingredients
1 pound cooked small prawns, peeled and pitted (reserve 16 whole prawns for garnish, optional)
2 small tomatoes, peeled and chopped (1 cup)
2 tablespoons ketchup
1 tablespoon packed dark brown sugar
1 garlic clove, chopped
1 tablespoon chopped fresh parsley
2 tablespoons olive oil, plus more for greasing
1 ½ tablespoons rice vinegar
Salt and pepper
16 slices of french bread
To make
Bruschetta is prepared quickly, easily and simply deliciously, making it a favorite snack all year round. In this shrimp bruschetta, sweet prawns combine with tomatoes, garlic and parsley to create a bright, flavorful filling for grilled garlic toast.
Combine shrimp, tomatoes, ketchup, brown sugar, garlic, and parsley. Add the oil and vinegar. Season with salt and pepper. Cover and refrigerate.Prepare the grill and place the grate 6 inches away from the stove. Lightly butter one side of each slice of bread. Fry the bread on the grill with the greased side up for 1 minute. Flip and saute on the other side until they are lightly browned, 1-2 minutes.Place a heaped tablespoon of shrimp mixture on the greased side of each slice of bread. Garnish with whole prawns if desired.
