Shrimp Florentine with Caramelized Garlic

Ingredients

Garlic:
½ teaspoon kosher salt
20 peeled garlic cloves
Cooking Spray
Shrimp:
2 teaspoons olive oil
1 pound medium-sized shrimp, peeled and pitted
1 teaspoon butter
¾ cup halved
½ cup low-sodium, fat-free chicken stock

For this Florentine shrimp dish, be sure to buy frozen spinach with crumbly leaves, as you can measure out exactly what you need. Buy fresh, peeled garlic to save cooking time.
Preheat the oven to 350 degrees.To prepare the garlic, combine 1/2 teaspoon kosher salt and garlic in a bowl. Place the garlic mixture on a jelly pan smeared with cooking spray. Bake at 350 ° for 25 minutes or until they are lightly browned, stirring occasionally.To cook the shrimp, heat the oil in a large nonstick skillet over medium-high heat. Add the shrimp; simmer for 3 minutes or until tender. Remove the shrimp from the pan.Melt the butter in a large skillet over medium-high heat. Mix in half, broth, cheese, 1/4 teaspoon salt, red and black pepper. Cook for 1 minute or until the cheese is melted, stirring constantly. Add shrimp and spinach; cook for 1 minute. Combine shrimp mixture, garlic mixture, and pasta in a large bowl; mix well. Serve immediately.
