Shrimp with Miso-Ginger Sauce

Ingredients

8 oz raw soba (buckwheat noodles)
2 tablespoons chopped fresh flat-leaved parsley
2 tablespoons white miso (soy paste)
2 tablespoons water
1 tablespoon rice vinegar
1 teaspoon honey, divided
1 teaspoon grated peeled fresh ginger
1 teaspoon minced garlic
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
12 oz large shrimp, peeled and pitted
Cooking Spray
4 green onions
2 teaspoons dark sesame oil
1 teaspoon fresh lime juice
1 teaspoon sesame seeds

This simple shrimp dinner with miso ginger sauce is ready in no time.
Cook the noodles according to the directions on the package; drain. Rinse with cold water; drain.Combine the parsley, miso, 2 tablespoons of water, vinegar, and 1/2 teaspoon of honey in a small bowl, stirring with a whisk until smooth.Combine remaining 1/2 teaspoon honey, ginger, garlic, salt, pepper, and shrimp in a medium bowl; stir to coat. Preheat a grill pan over high heat. Brush the mold with cooking spray. Place the prawns in the pan; cook for 2 minutes on each side or until tender. Remove the shrimp from the pan. Add the onion to the pan; cook for 1 minute on each side or until golden brown. Coarsely chop the onion. Combine noodles, onion, oil, and juice in a medium bowl; toss to coat. Sprinkle the noodle mixture with sesame seeds. Top with the shrimp noodle mixture. Drizzle the miso mixture over the shrimp.
