Simmered Pinto Beans with Chipotle Sour Cream

Ingredients
2 teaspoons olive oil
½ cup chopped onion
½ cup chopped red bell pepper
½ teaspoon ground cumin
2 garlic cloves, minced
½ cup unsalted chicken stock
⅛ a teaspoon of kosher salt
⅛ a teaspoon of freshly ground black pepper
1 can unsalted pinto beans (15 oz), washed and dried
1 tablespoon lemon juice
2 tablespoons chopped fresh flat-leaved parsley
¾ cup low-fat sour cream
3 tablespoons low-fat buttermilk
1 ½ teaspoons shredded chipotle chili, preserved in adobo sauce
To make
Overcooked beans may contain a lot of fat; serve these pinto beans stewed with ground cumin instead. Like cabbage, this topping can be served as a side dish.
Preheat a large saucepan over medium-high heat. Add the butter; stir to coat. Add the onion, bell pepper, cumin and garlic; simmer for 2 minutes. Add the broth, salt, black pepper, and beans; simmer for 7 minutes. Add the juice and parsley.Combine the remaining ingredients; serve with the beans.
