As simple as it may be, this is a great, effortless and reliable way to cook zucchini spaghetti in a slow cooker. Use zucchini cooked over low heat to make salads, as a vegetable substitute for pasta noodles, or as a simple fall side dish.
Stab the zucchini several times with a fork or knife. Put the zucchini in a slow cooker and add water. Cover and cook on low heat for 6 hours.Remove the zucchini from the slow cooker and allow to cool slightly. Cut the courgettes in half lengthwise; remove and discard the seeds. Scrape the zucchini pulp with a fork to remove the fibers. Simply serve with salt, black pepper, butter and cheese or other desired fillings.
