Ingredients

2 medium onions, thinly sliced
2 thinly sliced celery ribs
2 squeezed garlic cloves
1 pound beef brisket (2-3 pounds)
2 teaspoons salt
1 ½ teaspoons ground chipotle powder
1 cup coarsely chopped fresh cilantro
Flour tortillas
Filling: a mixture of grated Mexican cheese, sour cream, salsa, chopped fresh cilantro.

Beef brisket in a slow cooker is a surprisingly easy way to cook this piece of beef. Serve the shredded brisket on top of the tortillas with a variety of fillings of your choice for creative taco making in the evening.
Place the first 3 ingredients in a 6 cc slow cooker.Cut the fat from the brisket; cut the brisket into 3-inch pieces. Evenly rub the brisket pieces with 2 teaspoons of salt and 1 1/2 teaspoons of chipotle powder and place on top of the vegetables in the slow cooker. Sprinkle 1 cup cilantro on top.Cover and cook on high for 6-8 hours or until the brisket pieces are easily crushed with a fork.Remove the brisket from the slow cooker and allow to cool slightly. Using 2 forks, cut the meat into small pieces. Serve in flour tortillas with the desired filling and lime wedges.
