Slow-Cooker Chicken Cacciatore

Ingredients
1 large onion, thinly sliced
Chicken thighs with bones weighing 3-4 pounds
Two 6-ounce cans of tomato paste
Two 4-ounce cans of sliced mushrooms
1 green bell pepper, peeled and finely chopped
2-4 garlic cloves, minced
2 teaspoons dried oregano
1 tablespoon sweet paprika
1 teaspoon dried basil
½ teaspoon celery powder
2 tablespoons brown sugar
1 teaspoon salt or more to taste
½ cup dry white wine or chicken stock
3 tablespoons olive oil
1 teaspoon ground red pepper (optional)

This version of cooking a classic Italian chicken dish in a slow cooker is perfect for busy weekday evenings. Cook the chicken in a slow cooker, then serve with cooked noodles or rice.
Place the onion on the bottom of a 4-6-quart slow cooker. Add the chicken pieces to the slow cooker. Combine the following 12 ingredients and red pepper if using; pour over the chicken in the slow cooker. Cover and cook on low heat for 7 to 9 hours or on high power for 3 to 4 hours.Serve with pasta or rice.
