4 quarters skinless and boneless chicken legs (about 4 pounds)
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
¼ cup water
¼ cup smoked almonds
¼ cup raisins
2 tablespoons unsweetened cocoa powder
1 tablespoon ground cumin
2 tablespoons tomato paste
2 chili peppers, preserved in adobo sauce
1 tablespoon adobo sauce
1 teaspoon ground cinnamon
4 minced garlic cloves
1 small sweet onion, chopped
To make
Serve whole hams with brown basmati rice, or peel the chicken from the bones and place on corn tortillas with coriander, radish, and lime wedges for a family taco dinner.
