Slow-Cooker Salsa Chicken

Ingredients
2 pounds boneless and skinless chicken thighs, trimmed
Salt and pepper
1 cup canned salsa
Juice of 1 lime
¼ cup chopped cilantro
2 tablespoons chili powder
1 teaspoon cumin
1 tablespoon honey
3 garlic cloves, minced
Boiled rice or warmed tortillas if desired

Spray the slow cooker with cooking spray. Season the chicken with salt and pepper and put it in the slow cooker. In a large bowl, combine the remaining ingredients, except for the rice or tortillas, which can be used as desired. Drizzle over chicken; flip to coat. Cover and cook over low heat until the chicken is tender, 3 to 5 hours.Turn on the slow cooker to warm up and, using two forks, chop the chicken. Serve with rice or warmed tortillas, if desired.
