Slow-Cooker Sweet Potatoes with Bacon

4 pounds thin sweet potatoes, peeled and cut into 1-inch thick slices
½ cup frozen orange juice concentrate, thawed
4 tablespoons melted butter
3 tablespoons light brown sugar
2 teaspoons kosher salt
2 teaspoons chopped fresh rosemary
2 teaspoons cornstarch
1 tablespoon cold water
½ cup fresh flat parsley leaves, finely chopped
1 tablespoon orange zest
2 garlic cloves, minced
3 cooked bacon slices, crumbled

These sweet and salty sweet potatoes in a slow cooker are very easy to make on Thanksgiving morning. Whether you want to save space on the stove or just make it easier to prepare a side dish, these simple sweet potatoes are guaranteed to be just right.
Place the sweet potatoes in a 5-6 cc slow cooker. Combine the orange juice concentrate and the following 4 ingredients in a small bowl. Pour over the sweet potatoes, stirring to coat them.Cover and cook over LOW heat for 5 1/2 to 6 hours or until the potatoes are tender.Transfer the potatoes to a serving platter with a slotted spoon. Increase the power of the slow cooker to the maximum. Whisk together the cornstarch and 1 tablespoon of cold water until smooth. Whisk the cornstarch mixture with the cooking liquid in a slow cooker. Cook, whisking constantly, for 3-5 minutes or until the sauce thickens. Spoon the sauce over the potatoes.Combine the parsley, orange zest, and garlic. Sprinkle the potato mixture with parsley and crumbled bacon.
