Ingredients
1 teaspoon chili powder
½ teaspoon salt
½ teaspoon ground cumin
½ teaspoon freshly ground black pepper
1 pound skinless and boneless chicken thighs
Cooking Spray
12 (6-inch) white corn tortillas
1 ½ cups thinly sliced green cabbage
¼ cup (1 oz) low-fat, grated Monterey Jack cheese (such as Tillamook)
Low-fat sour cream (optional)

Making these simple yet delicious tacos is a great way to learn basic grilling techniques, spice up with Mexican spices, and make a simple salsa. Serve them with Pico de Gallo or salsa Tomatillo. Prepare the grill.Combine the first 4 ingredients in a small bowl; rub the chicken with the spice mixture.Place the chicken on a grill rack greased with cooking spray; cook for 10 minutes on each side or until tender. Let stand for 5 minutes; chop.Preheat the tortillas according to the instructions on the package. Spread the chicken evenly over the tortillas; sprinkle each tortilla with 2 tablespoons of kale and 1 teaspoon of cheese. Serve with sour cream if desired.
