1 ½ teaspoons ground ginger
¼ teaspoon ground cloves
1 large egg, room temperature
⅓ cup vegetable oil

What's the secret to this soft six-ingredient ginger cookie? Cake mix with spices. Perfect for last-minute holiday baking and gift-giving, these puffy cookies are almost too easy to make on a whim. If you want a richer flavor, you can always increase the amount of ginger to two teaspoons - but keep in mind that most store-bought gingerbread mixes already contain quite a strong punch.
Preheat the oven to 350℉.Whisk together the cake mix, ginger and cloves. Add the egg, butter, and molasses to the cake mix until smooth.Using a cookie scoop or tablespoon, place the dough about two inches apart on a baking sheet lined with parchment.Bake in the preheated oven for 10-12 minutes or until the cookies are set. Cool on a baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
