There will definitely be a weekend when you will have breakfast with a crowd of guests-holidays, birthday brunches, parents coming for the weekend. You have to feed everyone, but how? Bagel pasta doesn't come cheap, and you'll need a frying pan the size of Florida to make scrambled eggs for hungry company. Of course, you could leave out a carton of yogurt and a few cupcakes, but I don't think that's enough. At such times, you need dessert for breakfast. Layering classic breakfast ingredients that you may have on hand, such as yogurt, blueberry muffins or muffins, sliced fruit and granola, in a dessert bowl (or any large bowl), you'll create a delicate, creamy dish worthy of any hungry company. The best part of this dish should be whipped yogurt: mix lightly whipped cream with thick Greek yogurt, vanilla extract and maple syrup. After trying it in a trifle, be careful — you will sprinkle this filling on everything in a row.Roll for breakfast
Combine strawberries, blueberries, salt, and 2 tablespoons maple syrup in a medium bowl. Let stand, stirring occasionally, until the juice flows, about 10 minutes.Meanwhile, beat the heavy cream with an electric mixer on medium-high speed until stiff peaks form, about 2 minutes. Add the yogurt, vanilla extract, and remaining 3 tablespoons of maple syrup; beat until smooth, about 1 minute. Cover and refrigerate until ready to use. (You can prepare it 1 day in advance.)To make the trifle, place half of the muffin slices in an even layer on the bottom of a 3-quart trifle pan. Evenly top with 1 cup of the whipped yogurt mixture, 2 cups of the berry mixture, 1 cup of the granola, 1 more cup of the whipped yogurt mixture, and 1 1/2 cups of the sliced bananas. Repeat the layers once, finishing with the whipped yogurt mixture. Garnish with the remaining 1/2 cup berry mixture and bananas.4. Serve immediately or you can cook it 2 hours in advance.
