Spiced Apple Pork Chops

Ingredients

4 8-ounce pork chops with a bone in the center (about 1-inch thick)
¼ teaspoon salt
½ teaspoon freshly ground black pepper
1 teaspoon canola oil
Cooking Spray
1 chilled container (8 oz) with chopped onion (approximately 1 3/4 cups)
2 cups water
¼ cup thickly packed brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground ginger
1 pack dried apples (5 oz.)

The thickness of pork chops required for cooking ensures that the chops will remain tender and juicy for a long cooking time. Sweet potato mashed potatoes and braised Brussels sprouts complete the mouth-watering dish.
Sprinkle the pork with salt and pepper. Preheat a large nonstick skillet over medium-high heat. Pour the oil into the pan; stir to coat. Add the pork to the skillet; cook for 3 minutes on each side or until lightly browned. Transfer the pork to a 5-liter electric slow cooker, greased with cooking spray, leaving droplets in the pan. Reduce heat to medium. Add the onion to the filling in the pan; simmer for 3 minutes or until tender. Stir in 2 cups of water, scraping off the pan so that the pieces are not browned. Add the brown sugar and the following 3 ingredients (with ginger added). Remove the pan from the heat.Add the apples to the slow cooker; pour the onion mixture over the apples. Cover and cook over LOW heat for 3 to 3 1/2 hours or until tender. Serve the pork chops with the apple mixture.
