Ingredients

Chutney:
1 tablespoon butter
5 cups peeled apples, cut into 1/4-inch cubes (about 3 apples thick)
¼ cup dried cranberries
3 tablespoons brown sugar
3 tablespoons apple cider vinegar
2 teaspoons minced peeled fresh ginger
¼ teaspoon salt
¼ teaspoon dry mustard
⅛ a teaspoon of ground allspice
Pork:
¾ teaspoon ground chipotle chili pepper
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon ground coriander
¼ teaspoon ground black pepper
4 boneless pork loin chops (4 oz each), trimmed

Apple chutney is a heart-warming pork filling in this family dinner of spicy boneless chops.
To make the chutney, melt the butter in a nonstick skillet over medium-high heat. Add the apple; simmer for 4 minutes or until lightly browned. Add the cranberries and the following 6 ingredients (sprinkle with allspice); bring to a boil. Reduce the heat and simmer for 8 minutes or until the apples are tender; stir occasionally.To cook the pork while the chutney is simmering, preheat a grill pan over medium-high heat. Combine the chipotle and the following 4 ingredients (sprinkle with black pepper); sprinkle on the pork. Brush the grill pan with cooking spray. Add the pork to the skillet; cook for 4 minutes on each side or until tender. Serve with chutney.Thin slices of beans are a great addition to a quick meal. Heat 2 teaspoons of olive oil in a large nonstick skillet over medium-high heat. Add 12 ounces of beans to the pan; cook for 3 minutes, stirring occasionally. Add 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 2 thinly sliced garlic cloves; cook for 5 minutes or until garlic is lightly browned.
