Spiced Pork Tenderloin with Maple-Chipotle Sauce

Ingredients
Pork:
½ teaspoon salt
½ teaspoon dried thyme
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
¼ teaspoon freshly ground black pepper
⅛ a teaspoon of ground allspice
2 (1 lb) trimmed pork tenderloins
2 teaspoons olive oil
Sauce:
1 can of chipotle chili, canned in adobo sauce, 7 oz.
½ cup maple syrup
3 tablespoons low-sodium, fat-free chicken stock
1 ½ tablespoons apple cider vinegar
To make
To add smokiness to adobo sauce, you need a strong dark maple syrup of grade A or B.
To prepare the pork, combine the first 6 ingredients; sprinkle the pork evenly. Place in a large zippered plastic bag; close and refrigerate for 3 hours.Preheat the oven to 375 degrees.Remove the pork from the bag. Place pork on a baking dish; drizzle with oil. Bake at 375 degrees for 30 minutes or until a thermometer placed in the center of the pork reads 155 degrees. Remove the pork from the pan; cover and let stand for 10 minutes.To make the sauce, remove 2 teaspoons of adobo sauce from the chili jar; reserve the remaining chili pepper and sauce for another use. Add 2 teaspoons of adobo sauce, syrup, broth, and vinegar to the roasting pan, and scrape the pan until the pieces are browned. Cook over medium heat for 5 minutes, stirring constantly. Remove from heat. Transfer the pork to the pan, turning it over to coat. Remove the pork from the pan, leaving the sauce in the pan. Cut the pork into 1/2-inch thick slices. Strain the sauce through a fine sieve into a bowl; serve with the pork.
