Spicy Chicken Cacciatore

Ingredients

½ cup all-purpose flour
8 skinless and boneless chicken thighs (about 2 pounds)
1 tablespoon olive oil
3 cups chopped onion
2 cups chopped red bell pepper
6 garlic cloves, minced
½ cup dry red wine
½ cup tomato puree
2 tablespoons capers
1 ½ teaspoons crushed red pepper flakes
1 teaspoon dried oregano
1 teaspoon ground black pepper
¾ teaspoon salt
1 can unsalted tomatoes, cut into small cubes, skinless (14.5 oz)
¼ cup chopped fresh parsley

To make

Serve this savory dish with polenta or pasta. Turn the leftovers into soup: chop the chicken and put it in a saucepan with the sauce. Add the unsalted chicken stock, diced zucchini, and carrots; simmer until the vegetables are tender.
Pour the flour into a shallow dish; roll the chicken in the flour, shaking off any excess.Preheat a large skillet over medium-high heat. Add the butter; stir to combine. Add half of the chicken; cook for 4 minutes on each side or until lightly browned. Place the chicken in a 6-liter electric slow cooker. Repeat with the remaining chicken. Reduce heat to medium. Add the onion, bell pepper and garlic; simmer for 4 minutes. Add the wine; bring to a boil. Simmer for 2 minutes. Add the bell pepper mixture, tomato puree, and the following 6 ingredients (including diced tomatoes) to the slow cooker. Cover and cook over low heat for 4 hours or until the chicken is tender. Sprinkle with parsley.
