Spicy Tomato Aioli

1 tablespoon olive oil
¼ cup chopped onion
2 minced garlic cloves
1 teaspoon ground red pepper
1 can unsalted tomatoes, sauteed, diced (14.5 oz). drain the water.
2 teaspoons red wine vinegar
1 cup canola mayonnaise
¾ teaspoon kosher salt

To make

This smoky mayonnaise will be your favorite treat this grilling season. Canned tomatoes fried on fire are a divinely aromatic dish that gives a spicy smoky taste, combined with sharp notes of garlic and red pepper flakes. Pair it with your favorite burger, or treat yourself to a delicious French fries sauce. Pro tip: Be sure to let the tomato mixture cool completely before mixing it with the mayonnaise to get the perfect creamy texture.
Heat the olive oil in a medium saucepan over medium-high heat. Add the chopped onion; cook until soft, about 3 minutes. Add the minced garlic cloves and crushed red pepper flakes; cook for 30 seconds. Add diced tomatoes, sauteed over high heat, and red wine vinegar. Cook for 10 minutes; allow to cool completely. Combine the tomato mixture, canola mayonnaise, and kosher salt in a food processor until smooth.
