Dough:
1 cup baking flour, divided
1 cup warm water (100 to 110 °C)
1 teaspoon sugar
1 pack dry yeast (approximately 2 1/4 teaspoons)
1 ¾ cups all-purpose flour, divided
½ teaspoon salt
Cooking Spray
Filling:
4 bacon slices, chopped
1 pack fresh spinach (10 oz.)
2 cups 1/4-inch sliced onion
2 teaspoons sugar
1 tablespoon butter
2 garlic cloves, minced
3 tablespoons all-purpose flour
½ teaspoon freshly ground black pepper
1 cup low-fat milk 2%
1 tablespoon cornmeal
1 cup (4 oz) grated fresh parmesan cheese

Perhaps you will never guess that this delicious pizza is characterized by a modest financial cost. The cooking technology makes it juicy: a tender homemade crust is covered with a white sauce with garlic, which is then decorated with fresh sauteed spinach, caramelized onions, bacon and parmesan.
To make the dough, lightly spoon the bread flour into a dry measuring cup and smooth it out with a knife. Combine 1/2 cup bread flour, warm water, 1 teaspoon sugar, and yeast, stirring with a whisk. Let stand for 15 minutes.Lightly pour 1 1/2 cups all-purpose flour into a dry measuring cup; flatten with a knife. Combine 1 1/2 cups all-purpose flour, 1/2 cup bread flour, and salt in a large bowl, stirring with a whisk.Make a well in the center of the mixture. Add the yeast mixture to the flour mixture; mix well. Place the dough on a lightly floured surface. Knead until smooth and elastic (about 10 minutes); add enough remaining all-purpose flour, 1 tablespoon at a time, so that the dough does not stick to your hands (the dough will be sticky).Place the dough in a large bowl greased with cooking spray, turning it over so that it covers the top. Cover and let rise in a warm place (85°), draughty, for 45 minutes or until the dough is doubled in size. (Gently press two fingers into the dough. If there are dents, it means that the dough has risen sufficiently.) Knead the dough; cover and let rest for 20 minutes.To make the filling, saute the bacon in a large nonstick skillet over medium-high heat until crisp. Remove the bacon from the pan, leaving 2 teaspoons of the filling. Set the bacon aside. Add the spinach to the filling in the pan; simmer for 2 minutes or until wilted. Drain the spinach in a colander, squeezing until it is barely moist. Add the onion and 2 teaspoons of sugar to the pan; cook for 12 minutes or until golden brown, stirring frequently. Remove from heat; allow to cool.Melt the butter in a medium saucepan over medium-high heat. Add garlic; cook for 2 minutes, stirring frequently. Add 3 tablespoons flour and pepper, stirring with a whisk; cook for 30 seconds. Gradually add the milk, stirring constantly with a whisk. Cook for 5 minutes or until a thick foam forms, stirring constantly with a whisk.Preheat oven to 350 degrees Fahrenheit.Roll out the dough in a 12-inch circle on a floured surface. Place the dough on a 12-inch pizza pan or baking sheet greased with cooking spray and sprinkled with cornmeal. Grasp the edges of the dough with your fingers to make a side. Spread the milk mixture evenly over the dough; top with the spinach and onion.Bake at 475 ° C for 20 minutes. Sprinkle evenly with bacon and cheese; bake for another 5 minutes or until golden brown. Cut the pizza into 8 slices.
