Spinach, Onion, and Swiss Frittata

2 teaspoons canola oil
2 cups vertically sliced onion
4 cups fresh spinach leaves
8 large eggs, lightly beaten
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
3 ounces grated Swiss cheese (about 3/4 cup)

Gently lift the edges of the egg mixture, tilting the pan so that the raw egg mixture is in contact with the pan. Cook for 2 minutes or until the egg mixture is almost set.
