Steak Tacos with Lime Mayo

Ingredients
20 small sweet peppers
Cooking Spray
1 teaspoon ground chipotle chili pepper
1 teaspoon paprika
½ teaspoon kosher salt
1 (1 pound) steak, cut off
3 tablespoons canola mayonnaise (like Hellmann's)
1 teaspoon grated lime zest
1 tablespoon lime juice
1 teaspoon minced garlic
1 teaspoon of water
8 (6-inch) corn tortillas
½ cup chilled fresh salsa
2 ounces crushed queso fresco (approximately 1/2 cup)

In most supermarkets, look for peppers in bags - after roasting, you don't need to peel them off. Use fresh salsa that you can find in the products section, or your favorite salsa in jars.
Preheat the grill to high heat.Arrange the bell peppers in a single layer on a foil-lined jelly pan; lightly brush the pepper with cooking spray. Saute the peppers for 4 minutes on each side or until browned. Cool slightly; remove the legs. Pepper cut into strips.Combine the chipotle, paprika, and salt; rub the steak evenly with the spice mixture. Place the steak on a baking sheet greased with cooking spray; bake for 5 minutes on each side or until desired browning. Let the steak sit for 10 minutes; thinly slice the steak across the fibers. Combine mayonnaise and the following 4 ingredients; mix well.When cooking 1 tortilla at a time, heat the tortillas over medium-high heat, directly on the surface of the hotplate, for about 15 seconds on each side, or until slightly charred. Place 2 tortillas on each of the 4 plates. Spread the steak evenly over the tortillas; sprinkle each taco with 1/4 cup sweet pepper, 1 tablespoon salsa, 1 tablespoon cheese, and 1 1/2 teaspoons mayonnaise mixture.
